Ingredients
1 fl oz Blanco Tequila
½ fl oz aged aquavit
½ fl oz fino sherry
½ fl oz lime juice
For the toast syrup:
20 fl oz agave syrup
10 fl oz water
3 slices bread, toasted until dark
For the avocado puree:
2/3 cup chopped avocado
1 tbsp plus 1 tsp water
To serve:
Ice, cubed
6 fresh cilantro leaves, to garnish
Preparation
For the toast syrup
Combine all ingredients in a covered plastic or glass container and leave to infuse for three days. Then strain using a fine coffee strainer
For the avocado puree
Combine the avocado with water (5 parts avocado to 1 part water) in a blender and blend until smooth. Add a squeeze of lime juice to prevent oxidation
For the cocktail
Combine all the remaining cocktail ingredients together with the toast syrup and avocado puree in a shaker
Add ice and shake until diluted and cold
Fine strain into a chilled rocks glass over ice and garnish with the coriander leaves
