Spicy Korean BBQ with Ssäm and Ssämjang

Ingredients

For the spicy Korean BBQ sauce:
3 tbsp doenjang (Korean soy bean paste) or red miso paste
1 tbsp gochujang (Korean chili paste)
½ tbsp ginger, grated
½ tbsp garlic, grated
1 cup crushed canned tomatoes
½ tbsp tomato paste
2 tbsp fish sauce
1/3 cup dark brown sugar, packed
For the TABASCO® Chipotle Sauce ssämjang:
2½ tbsp doenjang (Korean soy bean paste) or red miso paste
2 tbsp gochujang (Korean chili paste)
2 tbsp mirin
½ tbsp roasted sesame oil
1 tbsp toasted sesame seeds
1 garlic clove, grated
1 green onion, finely chopped
For the wrap:
8-12 large leaves of lollo rosso, butter lettuce, or other large leafy lettuce
2 cups cooked white rice
2.2 lbs kalbi (short ribs), chicken or tofu

Preparation

To make the spicy Korean BBQ sauce, place all of the above ingredients into a small sauce pan and whisk to incorporate all of the ingredients together. Place over medium low heat, bring to a simmer and allow to cook, stirring often, for about 10-12 minutes until thickened and all of the sugar has dissolved

Allow to cool, then coat your meat or tofu of choice generously with the sauce and place on a hot grill or in a hot frying pan. Brush more sauce on often and allow it to caramelize, adding char and flavor

To make the ssämjang, whisk together all the ingredients in a bowl until smooth

To assemble, take a lettuce leaf, place a small scoop of rice in the centre, followed by a piece of your chosen protein and a good smear of ssämjang. Top with kimchi, green onion, chives, radish, sesame seeds or cress (if using)

Wrap up the filings by folding over the lettuce leaf to make a small parcel, and enjoy!

Serve with Kimchi Green onion, thinly sliced Chives, chopped Pickled radish, Sesame seeds, and Baby shiso cress.
