Remove casings from chorizo. Crumble meat into a heavy skillet over medium heat; cook and stir until browned and no longer pink inside, about 5 minutes, stirring to break up larger pieces. Drain well.
Stir in remaining ingredients and simmer until cheese is melted and mixture thickens, stirring often. Serve warm or cold with crackers.
