Quick & Easy Black Bean Burritos

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1/2 red bell pepper, chopped
  • 2 large cloves garlic, minced
  • 2 (15-ounce) cans black beans, rinsed and drained
  • 1/4 cup TABASCO® brand Buffalo Style Hot Sauce
  • 2 teaspoons ground cumin
  • 3/4 cup water
  • 6 (10-inch) flour tortillas, warmed
  • 1 cup shredded Monterey Jack or cheddar cheese (4 ounces)
  • Optional toppings: salsa, chopped cilantro, sliced green onion, diced avocado


Heat oil in a large skillet over medium heat. Add onion and bell pepper and cook 5 minutes, stirring occasionally; add garlic and cook 1 minute. Stir in beans, TABASCO® Buffalo Style Sauce, cumin, and water and bring to a simmer; cover, reduce heat to low, and cook 10 minutes or to desired consistency, stirring occasionally and adding additional water if needed to prevent sticking. Spoon beans down center of warm tortillas and top with cheese and desired toppings; fold one end over filling and roll up.

Makes 6 servings.
