  • 1/2 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 teaspoon dried oregano
  • 3/4 cup fresh mint leaves, finely chopped
  • 1/2 cup fresh parsley, finely chopped
  • 1 1/2 teaspoons TABASCO® brand Green Jalapeño Pepper Sauce
  • 1 teaspoon salt

Pasta Salad

  • 7 ounces orecchiette pasta, cooked, rinsed with cold water and drained
  • 6 scallions, finely chopped
  • 2 medium tomatoes, seeded and chopped
  • 1 cup pitted, chopped, oil-cured black olives
  • 1 medium cucumber, seeded and chopped
  • 1 cup (4 ounces) crumbled feta cheese
  • Lemon wheels and parsley, optional


Combine olive oil, lemon juice, oregano, mint, parsley, TABASCO® Green Sauce and salt in small bowl. Whisk together until blended; set aside.

Combine pasta, scallions, tomatoes, olives, cucumber and feta cheese in large bowl. Add vinaigrette; toss to coat. Cover. Chill 1 hour. Garnish with lemon wheels and parsley, if desired.

Makes 6-8 servings.
