Place shredded potatoes in large bowl. Drain any excess liquid from potatoes; add scallions, TABASCO® Sauce and salt. Stir to mix well.
Heat oil and butter in 10-inch skillet over campfire until hot. Add potato mixture; gently pat down. Cook 10 minutes or until bottom is golden. Carefully turn potato pancake. Cook 10 minutes longer or until golden, adding more oil and butter as necessary.
*To cook on stovetop: Cook in 10-inch nonstick skillet over medium heat as above.
Makes 6 accompaniment servings.
