Tuna Burgers with Mango Mojo

Ingredients

  • 3 tablespoons lime juice
  • 1 tablespoon lime zest
  • 1 small onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 tablespoons rice vinegar (cider vinegar can also be used)
  • 1 mango, chopped
  • 3 tablespoons olive oil
  • 1/2 teaspoon TABASCO® brand Habanero Sauce
  • 2 pounds sushi-grade tuna
  • 1 bunch scallions, finely chopped
  • 1 large egg, lightly beaten
  • 1/2 cup bread crumbs
  • 2 tablespoons vegetable oil
  • 6 seeded hamburger rolls

Preparation

In a small saucepan, combine lime juice, zest, onion, garlic, vinegar, mango, olive oil, and TABASCO® Habanero Sauce over medium heat. Bring mixture to a simmer and let cook for 10 minutes. Remove from the heat, season with salt and pepper, and let cool.

Cut tuna into 1/4-inch pieces and place in a medium sized bowl. Add the scallions, egg, and breadcrumbs. Season with salt and pepper and mix well. Form into 6 patties and brush them with the oil.

Grill on foil or broil burgers 2-4 minutes per side or until cooked to desired doneness. Serve on rolls with mango mojo on top.

Makes 6 servings.
