Cheesy Chipotle Corn Casserole

Ingredients

  • 4 (15.5-ounce) cans corn, drained
  • 1 1/2 cups chopped onion
  • 2 tablespoons TABASCO® brand Chipotle Pepper Sauce
  • 2 cups shredded Cheddar cheese
  • 1 (28-ounce) can whole peeled tomatoes, drained and coarsely chopped

Preparation

Heat oven to 375°F. Combine all ingredients in a 13x9x2 inch pan. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake until bubbly - about 25 minutes more.

Makes 8-10 servings.

*Serve alongside your favorite BBQ ribs or beef or, if short on time, with a simple store-bought rotisserie chicken.
