  • 2 1/2 cups water
  • 1 (8-ounce) package wheat pilaf mix
  • 1/4 cup lemon juice
  • 1/4 cup vegetable oil
  • 1 (12-ounce) can solid white albacore tuna packed in water
  • 1 cucumber, peeled, seeded and diced
  • 1/2 cup diced carrot
  • 1/3 cup sliced scallions
  • 1/4 pound mushrooms, sliced
  • 1 tomato, chopped
  • 1/2 cup sliced pitted ripe olives
  • 1/2 cup chopped parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon TABASCO® brand Original Red Sauce

Yogurt Dressing


Bring water to a boil in a medium saucepot. Stir in pilaf mix; reduce heat to low, cover, and simmer 15 minutes. Remove from heat; stir in lemon juice and oil. Let stand at room temperature until cool.

Stir in remaining ingredients; cover and chill several hours. Combine dressing ingredients in a small bowl and mix well; chill. Serve salad on a bed of greens and top with dressing.

Makes 8 servings.
