Penne Salad

  • 1/2 pound penne pasta, cooked al dente
  • 1/2 medium bell pepper julienned
  • 1/2 medium onion, julienned
  • 1/2 head fresh broccoli, cut into small florets
  • 3 ounces sliced pepperoni sausage (about 1/2 cup)
  • 1/2 cup sliced black olives
  • 1/4 cup sliced pepperoncini peppers


  • 6 large cloves garlic, minced
  • 1/2 cup balsamic vinegar
  • 1/2 cup extra virgin olive oil
  • 2 to 3 tablespoons TABASCO® brand Garlic Pepper Sauce
  • 1 tablespoon chopped fresh basil, or 1 teaspoon dried
  • 1 tablespoon chopped fresh oregano, or 1 teaspoon dried
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup grated Parmesan cheese


Combine all the salad ingredients in a large bowl. Combine all the dressing ingredients in a separate bowl and mix well. Pour desired amount of dressing over salad and toss well. Refrigerate overnight. Serve on a bed of radicchio and garnish with fresh basil.

Makes 6 servings.
