Praline Pecans

  • 2 tablespoons sugar
  • 1 cup pecans

Parsley Dressing

  • 1/2 cup salad oil
  • 1/4 cup chopped parsley
  • 2 tablespoons sugar, or to taste
  • 2 tablespoons sugar cane vinegar or cider vinegar
  • Salt and pepper to taste
  • 1/2 teaspoon TABASCO® brand Original Red Sauce

Mandarin Salad

  • 7 to 8 cups mixed greens torn into bite-size pieces
  • 2 green onions, chopped
  • 1/4 cup chopped celery
  • 1 cup drained mandarin orange segments


To make Praline Pecans, melt sugar slowly in a heavy skillet over medium-low heat. Stir in pecans and cook until they turn a light amber color. Spoon out onto waxed paper and let cool.

Combine all dressing ingredients in a small bowl and mix well; set aside.

To assemble salad, combine greens, green onions, celery, orange segments, and dressing in a large bowl and toss well. Sprinkle praline pecans on top.

Makes 4 to 6 servings.
