Thai Chicken Skewers

  • 1/4 cup smooth peanut butter
  • 2 tablespoons finely chopped onion
  • 2 tablespoons fresh lemon juice
  • 1 1/2 teaspoons TABASCO® brand Soy Sauce
  • 1 clove garlic, finely chopped
  • 1/2 teaspoon dried coriander
  • 1 teaspoon TABASCO® brand Original Red Sauce
  • 2 tablespoons finely chopped parsley
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • Wooden skewers


Combine first 8 ingredients in a medium bowl. Add chicken pieces and toss to coat. Cover and refrigerate 6 to 8 hours or overnight.

Meanwhile, soak skewers in water at least 30 minutes. Thread marinated chicken onto skewers. Grill or broil 6 to 8 minutes, turning frequently. Do not overcook.

Makes 4 to 6 servings.
