Roasted Tomato & Sun-Dried Tomato Salsa

  • 6 Roma tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 1/2 teaspoons roasted garlic
  • 1/3 cup peeled, seeded, chopped cucumber
  • 1/3 cup chopped green bell pepper
  • 1/4 cup chopped sun-dried tomatoes packed in oil
  • 1/4 cup TABASCO® brand Original Red Sauce


Place tomatoes in a roasting pan and toss with olive oil, salt and pepper; place in a 500°F oven and roast for 20 minutes or until done.

Place tomatoes and roasted garlic in a food processor and process until smooth. Combine all ingredients in a bowl and season with salt and pepper to taste. Refrigerate until ready to serve.

Makes 2 cups.
