Cracked Wheat Salad

  • 1/2 cup cracked wheat
  • 1 1/2 cups water
  • 2 cups chopped fresh parsley
  • 1/2 cup chopped fresh mint
  • 1/2 cup thinly sliced green onions (green and white parts)
  • 2 cups diced, peeled tomato
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon TABASCO® brand Original Red Sauce
  • 6 large lettuce cups


Soak wheat in water about 30 minutes or until tender. In a large bowl, toss together parsley, mint, green onions, and tomato. Drain wheat well and add to vegetable mixture in bowl.

Beat together oil, lemon juice, salt and TABASCO® Sauce; pour over wheat and vegetable mixture and stir well. Serve on lettuce cups.

Makes 6 servings.
