  • 6 medium-size red new potatoes, cubed
  • 1/3 cup olive or vegetable oil
  • 1/4 cup cider vinegar
  • 1 tablespoon country-style Dijon mustard
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1/2 teaspoon TABASCO® brand Original Red Sauce
  • 1/2 teaspoon salt
  • 1 tablespoon chopped fresh dill or 1/2 teaspoon dried
  • 1 tablespoon chopped fresh tarragon or 1/2 teaspoon dried

Cover potatoes with salted water in a large saucepan over high heat and bring to a boil. Reduce heat to medium and cook 10 to 15 minutes or until just potatoes are tender; drain and set aside.

Meanwhile, combine remaining ingredients in a large bowl and mix well. Add warm potatoes and toss until evenly blended. Cover and refrigerate at least 2 hours to blend flavors.
