Ingredients

1/2 cup chopped leeks
1/2 cup white wine
2 tablespoons chopped fresh dill
1 tablespoon lime juice
1 teaspoon salt
1 (2-pound) salmon fillet
Green Garden Dressing
1 cup plain yogurt
1 cup spinach leaves
1/4 cup fresh parsley leaves
1/4 teaspoon salt

Preparation

Preheat oven to 375°F. Combine leeks, white wine, dill, TABASCO® Green Sauce, lime juice and salt in small bowl.

Place salmon fillet on large piece of heavy-duty foil, bringing up the edges. Poke holes with fork all over salmon fillet. Carefully pour white wine mixture over salmon. Completely enclose salmon, crimping foil to seal edges completely. Place in large baking pan. Bake 20 to 25 minutes until fish flakes easily when tested with fork. Serve with Naturally Green Salad Dressing.

Dressing: Combine all ingredients in food processor or blender; blend until smooth. Serve with tossed green salad, cucumber-tomato salad, poached salmon, grilled chicken. Makes 1 cup.
