Avocado, Apple and Chamomile Cocktail

Ingredients

1.25 fl oz tequila 
0.5 fl oz green apple liqueur
1 fl oz freshly squeezed lemon juice 
1 fl oz chamomile syrup 
1/8 of a whole avocado, muddled
1 lime wedge to garnish
For the chamomile syrup 
0.7 oz chamomile flowers (alternatively you can use a chamomile tea bag)
18 fl oz boiling water
caster sugar 

Preparation

For the chamomile syrup

Combine the chamomile flowers and boiling water, then mix well and cover with cling film. Leave to infuse until it has completely cooled down (it should take roughly 30 minutes)

Strain the infused water through a muslin cloth to squeeze as much liquid out as possible

Measure out the liquid in milliliters and weigh out an equal amount of caster sugar in grams

Add the caster sugar and mix well until the sugar has fully dissolved

Keep syrup chilled when not in use

For the cocktail

Combine all ingredients together in a shaker. Add ice and give the mixture a hard shake

Double strain into a coupette glass and garnish with a lime wedge
