Yakitori Meat Skewers

Habanero Sauce
Ingredients
Skewers
8 oz (chicken, beef or lamb) cut into 1 inch dice
6 bamboo skewers soaked in water for at least 30 min
Marinade and sauce
1 tsp TABASCO® Habanero Sauce
1/2 cup light soy sauce
2 tbsp clear honey
1/2 cup sugar
3 tbsp mirin
1 piece fresh ginger 1 inch peeled and grated
1 clove garlic crushed
Juice and zest of half an orange
1 tbsp water
1 tbsp cornstarch
Garnish
1 tsp toasted sesame seeds
2 green onions sliced
2 portions white rice
Preparation
Method
In a large bowl mix all of the marinade ingredients together. Stir will to dissolve most of the sugar
Add the meat to marinade for at least 20 min (best done overnight)
Remove the meat and place the marinade into a saucepan and bring to a boil. Reduce the heat and summer for 5 min until the sauce starts to reduce
Mix the water and cornstarch together and gradually add to the hot sauce. This should thicken to a clear sauce then keep warm
Grill the meat skewers on a BBQ or grill pan until cooked through. Serve with rice and topped with the toasted sesame and green onions with sauce on the side
