Sauces & Condiments : Roasted Tomato & Sun-Dried Tomato Salsa
- 6 Roma tomatoes
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 1/2 teaspoons roasted garlic
- 1/3 cup peeled, seeded, chopped cucumber
- 1/3 cup chopped green bell pepper
- 1/4 cup chopped sun-dried tomatoes packed in oil
- 1/4 cup Original TABASCO® brand Pepper Sauce
Place tomatoes in a roasting pan and toss with olive oil, salt and pepper; place in a 500°F oven and roast for 20 minutes or until done.
Place tomatoes and roasted garlic in a food processor and process until smooth. Combine all ingredients in a bowl and season with salt and pepper to taste. Refrigerate until ready to serve.
