Cajun & Creole : Red Hot Hoppin' John
- 2 teaspoons olive oil
- 5 ounces uncooked spicy ground turkey sausage
- 1/3 cup finely chopped onion
- 1 small garlic clove, minced
- 1/3 cup chopped red bell pepper
- 3/4 cup frozen, chopped collard greens
- 3/4 cup uncooked brown rice
- 2 1/4 cups chicken broth
- 1 1/8 cups frozen black-eyed peas
- 2 teaspoons TABASCO® brand Garlic Pepper Sauce
- 1 small thyme sprig, fresh
- Salt to taste
- Freshly ground black pepper to taste
Heat oil in a large saucepan over medium heat. Add sausage and stir to break up into pieces; cook until done. Remove sausage with a slotted spoon and drain on paper towels; set aside.
Pour off all but enough fat to slightly coat the pan. Add onion, garlic, and red pepper. Sauté over medium heat until onions are tender and golden brown. Add collard greens and cook 2 minutes. Stir in rice, chicken broth, peas, TABASCO® Garlic Sauce, thyme, salt, and pepper and bring to a boil; cover and simmer for 20 minutes or until peas and rice are tender and liquid is absorbed.
Fluff rice with a fork and add cooked sausage, heating thoroughly. Serve with additional TABASCO® Garlic Sauce, if desired.
