Breads : Indian Sandwiches
- 1 1/4 cups fresh, soft cheese, such as farmer, ricotta, pot, goat, or cottage cheese
- 1/2 cup plain lowfat yogurt
- 1/3 cup thinly sliced carrot
- 1 small tomato, seeded and diced
- 1/2 cup diced green bell pepper
- 1/2 cup thinly sliced cucumber
- 1/3 cup mixed fresh herbs, such as parsley, basil, dill or mint
- 1 tablespoon candied ginger
- 1/2 teaspoon Original TABASCO® brand Pepper Sauce
- Salt to taste
- 4 pita bread pockets or flour tortillas, sliced in half
Combine all ingredients in a bowl and mix well. Serve in pita bread pockets, or spread on tortillas and roll up.
Makes 8 servings.
