French : Ham and Broccoli Quiche
- Pastry for one (10-inch) deep-dish pie
- 1 tablespoon butter or margarine
- 1 (10-ounce) package frozen chopped broccoli, thawed and squeezed dry
- 1 cup diced cooked ham
- 1 small onion, minced
- 1 teaspoon salt
- 1 1/2 cups half-and-half
- 1/4 cup all-purpose flour
- 3 eggs
- 1 tablespoon Original TABASCO® brand Pepper Sauce
- 2 cups shredded Cheddar cheese
Preheat oven to 350°F. Line a 10-inch deep-dish pie plate with pastry. Line pastry with foil and weigh down with dried beans. Bake 10 minutes. Remove beans and foil and bake 10 minutes longer or until crust begins to brown lightly. Cool.
Melt butter in a 10-inch skillet over medium heat. Add broccoli, ham, onion, and salt. Cook until liquid evaporates, about 5 minutes, stirring occasionally. Remove from heat.
Combine half-and-half, flour, eggs, and TABASCO® Sauce in a medium bowl and beat until well blended. Stir in broccoli mixture and cheese and pour into crust. Bake 40 minutes or until lightly browned and set. Cool 10 minutes and serve.
Makes 8 servings.
