Salads : Guadeloupe Chicken Salad
- 2 cups diced cooked chicken
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped carrot
- 2 tablespoons finely chopped red bell pepper
- 2 tablespoons chopped cilantro
- 2 tablespoons capers, drained
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup TABASCO® brand Green Jalapeño Pepper Sauce
- 2 tablespoons lemon juice
- 1/4 teaspoon ground cumin
- Salt to taste
- Lettuce leaves
- 1 avocado, peeled and cut into wedges
- Paprika
Combine chicken, onion, carrot, bell pepper, cilantro, and capers in a bowl and mix well. Combine mayonnaise, sour cream, TABASCO® Green Sauce, lemon juice, cumin, and salt to taste in a small bowl and mix well; pour over chicken mixture and toss well.
Serve on lettuce leaves with avocado wedges and sprinkle with paprika. Add more TABASCO® Green Sauce, if desired.
Makes 4 servings.
