Cool Fruit and Vegetable Salad with Hot Tomato Dipping Sauce
- 2 medium tomatoes, coarsely chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 3/4 teaspoon TABASCO® brand Original Red Sauce
- 3 sprigs cilantro
- 1/4 teaspoon salt
- 1 small head green leaf lettuce
- 4 large honeydew melon slices
- 1 large navel orange, peeled and sliced
- 1 medium cucumber, thinly sliced
- 1 red bell pepper, cut into thin strips
- 3 large green onions
In a food processor or blender, combine tomatoes, olive oil, vinegar, TABASCO® Sauce, cilantro and salt. Process until mixture is smooth. Refrigerate until ready to serve.
Arrange lettuce leaves on a large platter and top with melon, orange, cucumber, red pepper and green onions. Serve with dipping sauce.
