Ingredients

Chipotle Vinaigrette

  • 1/3 cup extra-virgin olive oil
  • 3 tablespoons TABASCO® brand Chipotle Pepper Sauce
  • 2 tablespoons red wine vinegar
  • 1 large clove garlic, minced
  • 1/4 teaspoon salt

Salad

  • 1 (15-ounce) can garbanzo beans, rinsed and drained
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) can pinto beans, rinsed and drained
  • 1/2 cup chopped carrot
  • 1/3 cup chopped red onion
  • 1/4 cup chopped cilantro or parsley

Preparation

Combine vinaigrette ingredients and set aside. Combine salad ingredients in a large bowl and drizzle with vinaigrette; toss gently until well mixed.

Makes 8 servings.
