Spicy Moroccan Glaze

  • 1/2 cup plain yogurt
  • 1/3 cup lime juice
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 teaspoon TABASCO® brand Original Red Sauce
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 clove garlic, minced


In a small bowl combine all ingredients until well blended. Pour over lamb, pork, beef or poultry. Cover and refrigerate at least 2 hours. Grill or broil meat, brushing with glaze during last 10 to 15 minutes of cooking. Cook meat at least 5 minutes after last brush with glaze.

Makes about 1 cup.

    Fantastic recipe... Nothing beats the flavour of Tabasco with pork & beef.
    I just made a couple of changes... I added more garlic (around 4 - 5 cloves of garlic), a little crushed ginger and corriander seed powder. Additionally, I hung the yogurt in a muslin cloth for about 1 hour before adding it to the marinade (it made the marinade thicker & creamier).
