Combine all ingredients in a food processor or blender and process until smooth. On a serving plate, shape mixture to resemble a pumpkin,* or spoon into a serving bowl. Refrigerate until ready to serve. Serve with crackers, tortilla chips, or vegetable dippers.
*If desired, make a pumpkin face using black olives; use a green bell pepper square for the stem.
